Amphi Salad

  1. This past weekend outing at Port Washington hosted by Nick and Sandy
    was wonderful, thank you to all who attended for making such
    wonderful memories for us. Marty and I and the girls are still
    rocking from the "high waves" experience and the new friendships we
    have made. Our car ran great, once we made it there.

    As requested by those attending, here's the recipe for the oriental
    chicken salad we brought to the outing which everyone renamed "Amphi
    Salad". For those who missed the tasting party, this is an easy to
    make wonderful summer salad which always disappears rapidly whenever
    we make it. Enjoy.

    Oriental Chicken Salad

    1 medium head of cabbage chopped fine
    4-5 green onions, chopped
    4 chicken breasts, cooked and cut up fine. ( I use a whole chicken.)
    3 packages of Ramen Noodles, chicken flavor
    1 small jar sesame seeds, optional
    8 oz. package slivered almonds

    Toast the sesame seeds and almonds, 8-10 minutes at 350 degrees, just
    till light brown. Cook the Ramen Noodles (without adding the
    packets) as directed on the package. Chill the noodles. Mix together
    all the above ingredients and chill. Mix the dressing ingredients
    together well and chill. Pour on salad at least 1 hour before
    Keeps well in refrigerator.

    6 tablespoons sugar
    1 1/2 cups Puritan Oil
    3 teaspoons salt
    3 teaspoons pepper
    9 tablespoons white vinegar
    3 teaspoons accent ( I omit this ingredient)
    3 packets of seasonings from the Ramen Noodles
